Produced from my own olive grove in Chania (Han-e-a'h) Crete, and we have sold our Extra virgin olive oil for 5 years now; packed imported and distributed direct from our store. Olive Oil is produced only once a year during the winter months. I travel to Greece every year in March to personally oversee the quality of the olive oil been processed, to assure that it is the finest available on the market today. When extra virgin olive oil is new and fresh it can also be considered light olive oil. As it ages the acidity level increases and becomes heavier in taste & smell, and eventually becomes rancid. That's why it's so important for olive oil to have exp. date.

According the international trade standard applying to olive oil. Extra Virgin Olive Oil is the oil obtained from the fruit of the olive tree solely by mechanical or other physical means under conditions, particularly thermal conditions, that do not lead to interactions in the oil, and which has not undergone any treatment other that washing, decantation certification and filtration.

In other words other olive oil that has been recycled and refined cannot be called "Extra Virgin olive oil".

Only the first cold pressed olive oil can be called "Extra virgin".

The acidity is 0-1% and has been written on the front side of the can.

The production day is this year's (2008), and the expiration day is written on the topside of the can (12/2009).

Available in metal containers only to protect the olive oil from the light that can damage its color, taste, smell, acidity and help to preserve it's freshness. Besides the container is more secure to shipment because is not fragile.
